Covering up exposed Strofoam

I just built a slab foundation and was required to put rigid foam on the outside of the slab all the way up to the top of the slab-the building inspectors saidthat was how it is to be done but did not know what to do next-I can't leave this pink board exposedbut am not comfortable stuccoing it-beyond being an incredibly stupid detail, no one seems to know what to do with it other than covering it up-by the way, the inspectors also said I had to cut it down 2 inches from the top so that I could see if termites were going into the slab-an even dumber detail-any ideas? Is this happening all over the country or does North Carolina have a corner on the stupid market?
