covering plaster ceiling

ok it's like this. 90 yr old house, remodeling dining room and thought we would simply cover old (poor condition)plaster ceiling with drywall. Screwed in some 1x1 straps but didn't worry about whether or not we were screwing into joists. With all that lath and plaster who can find them? Then we started screwing up 3/8 drywall. After getting a couple of pieces up it occured to us that maybe we should have put more straps up, at the moment each piece is just attached at the 4 sides we should probably have one running through the middle too, huh?. Well... stopped to look at it and think for about a month and I'm getting the feeling we're doing everything wrong.Aren't we?
