Lets make this real simple. Lets say it took these 2 guys 10 hrs. to finish the work. Thats $500. for each,for the day. Break it down. Thats $50 bucks an hour. The less time it takes,the more they make per hr. This friend of a friend is taking you. Get someone else or make these guys work by the hour with a maximum on the hours. Make sure you get a guarantee in writing on their work, including checking everything before they pour the concrete. { Dont't let them come back and blame the rebar for a bad job. } Also specify either a slick finish or a broom.
