No doubt about it. Copper is the way to go if at all possible. Just remember to use a heat shield of double 26 gauge sheet metal between the joist and the part you are sweating (soldering) together. Hold the sheets in place with a couple of short drywall screws. The biggest trouble with plastic piping is the joining to the existing system. High likelihood of leaks unless you are very careful.
