1/ yes you can attach copper to galvz. however you need to separate the copper and galvz. pipe by using a dioelectric union or a brass fitting to keep the electrolysis prosess of the copper and galvz. pipe from eating away at the galvz. pipe.
2/yes you can use galvz. if you wish for the hot water.
3/ as for the laying the plywood I would use at least 5/8" T & G plywood and glue it as well as nail it down. T & G is made for flooring.
