Dave225, it sounds to me like Corian or one of its clones is what you want. The problem is that this is really not a do-it-yourself project for most people. You might have the carbide bits and so on to do some work on it but probably not everything. These can really add up. The material cost is pretty steep and messing up a piece would sure take away any savings. I know that some home centers are stocking Korstone, though, so you might look around.
