I like your comment "We're" not afraid of hard work
"he's" worked in construction in the past, ( thats what my
wife would say).
I think you're best bet is to have a bigger water heater and get
more pressure, moaning waterpipes, "could be" that the wall clips
that hold the pipes to the wall are too far apart and sometimes
when the water stops/starts it vibrates the pipes so you get a knocking/moaning
through the pipes through out the house, fit more clips.
Also check out the size of the pipes from the heater to the shower, you may need
to make them bigger to allow more water to pass through.
Wait a while and see who else can help you, more info the better.
