cieling fan, light installation

I bought one of those little fittings that screws into the bottom of the fan and holds a bulb and a small shade. It has two wires: one black, one white.
The fan, by contrast, is a spaghetti factory. There are 5 sets of paired wires (blue/blue, black/black, red/red, brown/brown and yellow/white). There is also a set of 3 blue wires and a set of three black wires. And finally, three white wires with a short 4th piece that goes nowhere.
Several of the pairs go into the switch that controls speed. I would assume they can be rulled out. Some also go to a switch that may have controlled direction (tho it only goes one direction now).
There is no brand name on this fan, nor any labels on the wires. Where does one begin?
