Usually you'll tear it up. The new tub surrounds will show imperfections of the wall. I used that moisture resistant green drywall but the best solution is that concrete board I believe it comes in smaller sheets. I don't see any way you'll be lucky enough to have a perfectly smooth surface after removing the ceramic tile.
