cement flooring in kitchen

Our kitchen dining area is situated on a cement slab... 1870 house. It's cold and hard and "dips" in places. Considered carpeting so we can insulate and create a softer support for legs. Would perfer wood, but the uneven-ness of the floor would make this difficult. Would like environmentally friendly products. Any suggestions?
