Cast your vote: Water or oil based poly for wood floors? (or seal/wax?)

I sanded my wood floors, and it wasn't bad at all! Have some help, and go slow and easy would be my advice. Now, it is time to apply the finish. I've read EVERYTHING, all the pros/cons of each method, but I want your opinions. What will I be happiest with in the long run? I don't mind dealing with the fumes and extended drying time of the oil if it worth the effort. Also the simple seal/and wax system seems attractive in that I shouldn't have to sand again to refinish -It seems like the least amount of work, but my mother swears it is a ton of work to maintain. If it matters, the floors are heart pine, and I absolutely refuse a high gloss/plastic coated floor. I've also read about coats 1 and 2 being high gloss, and the third matte or low. Is this level of detail really worth it, or just anal? Thanks - I need to decide by this weekend.
