capping off pipes

I just yanked a wet bar out of my house and I need to cap off the pipes so I can finish laying the carpet in that part of the house. The piping runs underneath the house in a crawlspace so I can cap it anywhere I want to down there. We are eventually going to put a half bath in where the old wet bar was located. Where should I cap the pipes and what kind of materials do I need. There are three pipes. Two copper for hot and cold and one plastic for drain.
