John, I would not use a particle board for cabinet construction; a plywood will be a much better choice. Cabinet interiors are often done in a birch-face ply; birch has a tighter, more even grain than oak, so it's easy to keep clean. Also a little lighter in color, and often finished clear (no stain); this keeps the inside of the cabinets brighter.
