Carl, your friend is pretty much right; if the ceiling wavers up & down, you'll not be able to close the entire gap without scribe fitting the cabinets to the ceiling, which could be tough.

The only thing that might improve the fit short of this is to plane the sides of the cabinets at a taper, lower at the wall, so the top front edge can get tighter.

If the sloping area was just one high joist, with the rest of the front being in contact, you could go to the attic and carefully drive shims in between the joist & the backside of the drywall to force it down some.

Beyond there, you have to resort to using a small trimmer to conceal the gap.
