cabinet stripping and restaining

WE have a house built in the 1960's in California that has typical solid oak kitchen cabinets, island and side facings with dark stain. We wish to remove the dark stain and put on a lighter colored stain....We have been told that products such as JASCO premium will do the stripping job by just brushing it on and removing with rags....Is it really that easy??? Are there other less toxic products that I can use that will give me good results? Also what do i do to prep the wood after staining?
