Big Thanks and a ? (of course)

Just wanted to give a big thanks for advice about installing a kitchen sink cabinet. I FINALLY got out all baseboard and was able to life the cabinet into place (pipes coming out of floor). Everything is hooked up and running correctly.

Now, my house has two (potential?) problems. One is that the pipes are all galvanized steel. Would you recommend replacing with PVC or wait until it leaks or water pressure gets low? Right now it is fine. Second problem is the wiring. I have cloth covered wiring. Not sure what the wire itself is made out of. Most of the outlets themselves are not grounded although I do have the grounding wire attached to the cold water pipe. I asked the electrician who was here today about cost of replacing all the wiring (maybe one room at a time). He said it would be very pricey considering I do not want to rip down my nice plaster walls. Is it worth it? How hard is it?
