You want to make sure you aren't undermining a load bearing section of wall, only to bring the house down on you. Placing some cribbing under the joists until you can install a header above the door isn't a bad idea.

When you go to sawcut the inside of the brick, make sure you wear excellent ear eye and nose protection in the form of earplugs, goggles, and a dust mask. The block is going to eat through the blades pretty fast, so buy lots when you rent the saw, most rental companies will buy unused blades back, but it's a pain to have to go buy more in the middle of the project.

Beware of electricity and water, even in a block wall. You just never know...

If you are careful with your sawcutting, the block should have a pretty decent finish to it, but you can frame your door in with brickmoulding and such when you get the door in. I would also foam the space between the door and the bricks before you trim it out, to seal it good.
