Bathroom walls

I have a very humid bathroom. I'm trying to redo the whole room but the walls are rough in some spots and smooth in others. The last owner patched holes instead of retexturing. How can I fix this? Could I use panelboard and nail it up or will the humidity cause a problem? I thought of sanding the walls down but I'm afraid the paint on the wall may contain lead and I have pets. Any ideas?
