Basement ceiling

Currently we have a finished basement with a drop ceiling which I do not care for (Too office-like). I would prefer a drywall ceiling but my husband wants easy access to any wiring or pipes. I have this idea to use drywall, but to section it in 4 x 4 or 6 x 4 pieces. I would attach wood extensions running perpendicular to the joists to allow for any pipes that hang lower than the joists and screw the drywall into the joists. Then, instead of compounding and taping the seams, run molding over the seams so that the ceiling would appear to be sectioned off in large squares (or rectangles). If it is necessary to reach a pipe, then one section could be removed without cutting out the drywall. Is this a feasible project? Any advice or pointing out potential problems would be appreciated.
