Bar's ready for poly. What's best applicator?

My bar top is ready for poly, and you guys have convinced my to use spar varnish.

Two questions:

1. What is the best type of applicator to use? Regular brush that may leave strokes? Foam brush? Something else?

2. Would the bar top look better in semi-gloss or full-gloss? I know its personal choice, but I was going to use Minwax Helmsman Spar varnish Semi-Gloss because the previous owner left me half a gallon. Unless someone can convince me otherwise. I don't know how much of a gloss you actually get with semi-gloss. I know you get none with satin.
