Attic stair installation (garage)

I currently have a 20x20, separate (it's attached but not part of the main footprint of the house, structurally) garage that has no access to its attic. I would like to get up there to run wires, check for damage, etc. I figured if I'm going to make an opening I might as well put in the stairs.

Here is my question. All the step by step guides for installing these things include installing them parallel to the joists and cutting one joist and framing it out. They make no mention of any kind of temporary support when cutting that one joist. Is it OK to do this on a 20 foot span only supported on the ends? I suspect (I have obviously never been up there) the joists are 2x?'s placed 16" on center since the rest of the house is framed this way. I understand how to frame it once I cut the.

Is cutting this joist pretty much no problem as long as it is framed properly, afterwards? Hate to have the garage collapse around me when I cut it. That would ruin the weekend!
