Attic Remodel and re-roofing problem

In planning to re-roof our recently purchased 1917 home and doing a minor survey of attic space to see if it would make sense to plan an attic remodel I discovered that the roof has shingles covered with plywood sheeting and then composite. There is no ridge beam or joist as the original 2 x 4's meet at the ridge, and the inside height of the the attic from rafter to ridge is 89". Question 1: Will I have to tear off all of the composite,warped sheeting and shingles to re-roof the house? Question 2: In re-roofing will I need to put a ridge beam or joist in place? Question 3: If I am going to the trouble of doing this, should I consider changing the pitch of the roof and possibly add dormers for a future remodel of the attic space?
