Adding to Jennifer's post on kerfing the back of the drywall; this method does work well.

I've done as tight as a 4' radius arch with 1/2" drywall that was score-cut through the backside paper with a utility knife in 1" increments and the snapped as you would normally do to divide a sheet; the tighter the radius - the closer you need to kerf and the less mud floating you'll need to do.
