Applying Additional Varnish to Kitchen Cabinets

My husband and I (about 5 yrs ago) stripped, bleached, stained and had a friend put a coat of varnish on our Ash kitchen cabinets. As things, go we never got around to applying a second coat of varnish. After all this time the cabinets are starting to become a little dull, plus we have just added new crown molding. I know that we will need to lightly sand them and then apply new varnish, but I have know idea about what grid of sandpaper (220?) and if I should just use a damp cloth vs. tack cloth. Also, what brand and kind of varnish do you recommend we use? (i.e. wipe on or brush on). We do want the high shine, so I assume we will want Gloss vs. semi-gloss. I have found that our local home improvement store employees no even less than me. Please help.
