The glossy finish can be de-glossed with steel wool (best)or fine sand paper. Then a new finish coat of satin or flat finish urethane or lacquer can be applied. Stain will not penetrate the old finish unless stripped, and stripping could damage the veneer. The deglossing and addition of a new finish coat should leave your cabinets looking like new without damaging them.
