It would be less expensive to rip some 2X lumber or a sheet of plywood into strips. Attach the 1/2" thick material on top of existing studs. You can then nail drywall to the shimmed studs. I have built out walls up to 2 inches using this method. It would be a waste to install whole sheets under drywall just to adjust the thickness of the wall, and would inhibit future access.
