adding trim around windows?

i have a 10 year old house with wood siding that butts up against the casing of all the windows. we are thinking of putting trim around the outside of all the windows (like 3.5inch wood painted to match the trim). the question i have is, since the siding is staggered as you move from the top of the house to the bottom (it overlaps) how do you begin to add trim such that it looks good and is structurally sound in the attachment? Is there something that you can place over the siding to give you a flat surface to begin with or would you cut the siding back far enough to allow you to attach the trim pieces to the layer below the siding?
