Your pressures seem fine, maybe a tad low but not enough to cause it to cycle on and off during times of high humidity. Check your condensation line (you will find that in the evaporator coil of your air handler) and find out if there is a safety shut off switch. Your condensating line may be backed up and as the water builds up a switch may be shutting your AC unit down until the water drains from the line.
