I prefer contact paper on the kitchen cabinets because they are so often made with particle board or something else that either doesn't clean easily or doesn't like to get wet. Not knowing what the actual surface of the inside of your cabinets is, I can offer the following suggestions:
If the cabinets are melamine or formica inside, you can try to use "goof-off" (it comes in a yellow can with red words in the paint section of your big box store). Use lots of ventilation and rubber gloves. This stuff is nasty. Give up your smoking habit first, too.

If the insides are exposed raw particle board or something close to that, don't get real agressive. I recommend scraping the chunks out so you have a smooth surface and re coating the shelves with a tasteful contact paper you can live with. If you do a good job on the installation, you should enjoy the results...
