You might have to send us a little more detail because it is not exactly clear what the problem is. If the drywall walls are now not as thick as the plaster ones were, then it sounds like your window and/or door jambs will be sticking into the room past the plane of the finished walls. This could have been avoided by shimming the studs before drywalling to pad the drywall out to the right thickness. Depending on the situation there are different ways of takling this. 1. Leave the jambs the way they are and add a thin ripping to the backside of the outside edge of the casing (what I would probably do). 2. get a power planer and plane down the jambs to be flush with the walls (a real pain). 3. If the casings are thick (ie: 3/4" sqare stock) then you could rip some thickness off at the inner back edge to allow for the jamb.
